**Ingredients:**

– 1 cup vegetable broth
– 1/2 cup soy sauce
– 1 tbsp olive oil

For the Broth:
– 8 cups water
– 1/2 cup soy sauce
– 2 garlic cloves, smashed
– 1 piece of kombu (optional, but it adds a nice umami flavor)

For the Soy Garlic Glaze:
– 1/2 cup soy sauce
– 1/4 cup mirin (Japanese sweet rice wine)
– 1/4 cup maple syrup
– 3 garlic cloves, minced
– 1 tsp freshly grated ginger
– 1 tbsp cornstarch + 2 tbsp water (to make a slurry)

### Instructions:

#### Step 1: Make the Seitan Dough

1. In a large bowl, combine the vital wheat gluten, nutritional yeast, garlic powder, and onion powder. Give it a good mix.

2. In another bowl, whisk together the vegetable broth, soy sauce, and olive oil.

3. Pour the liquid mixture into the dry ingredients and mix until it comes together. Knead the dough for about 5 minutes until it becomes firm and elastic.

**Tip:** Don’t be afraid to really get in there with your hands! Kneading is part of where seitan gets its texture. If the dough is too sticky, just add a bit more vital wheat gluten.
